Roswell and I made these for dinner last night and they were delicious! I used to love the Spicy Chicken Crunchwrap Supreme at Taco Bell and was so sad when they discontinued it… probably a good thing for society ;) But now I can make them at home with better ingredients and get my fast food fix! Homemade Crunchwrap Supreme
Ingredients:
  • 6 large flour tortillas
  • 6 small corn tortillas (or tortilla chips)
  • 1 pound ground beef (or turkey!)
  • 1 package taco seasoning
  • sour cream
  • nacho cheese (or shredded Mexican blend cheese)
  • shredded lettuce
  • diced tomatoes
Directions:
  • Brown ground beef in a skillet, then add taco seasoning (according to package directions). Set aside.
  • Bake the corn tortillas in the oven at 400 degrees for a couple of minutes, until they are golden and crunchy.
  • Microwave the flour tortillas, one at a time (because they cool off quickly), for about 10 seconds to warm them up; this will make wrapping easier. You could also warm them up in the oven; just wrap them in aluminum foil and heat them up for about 10 minutes at 350 degrees.
  • Lay out the flour tortilla. Spoon some of the seasoned beef into the center of the tortilla. Top with some nacho cheese, or shredded cheese. Place the crunchy corn tortilla on top of the cheese/beef; spread a dollop of sour cream on top of it, then toss on some diced tomatoes and shredded lettuce.
  • Starting with the bottom of the tortilla, fold the edge up to the center. Continue doing this in a clockwise or counter-clockwise movement until all of the tortilla is folded over, and the filling is entirely enclosed. If your filling isn’t entirely enclosed and you have an open spot, simply cut out a circle from another flour tortilla and place it on the exposed area, then wrap the tortilla again. 
  • Spray a frying pan with cooking spray.  Carefully place the Crunchwrap, seam-side down, in the pan. Press with a spatula and cook on medium-low heat, for about 3 minutes, until the bottom is nice and brown. Flip it over and cook for another 3 minutes. Serve and enjoy :D

Roswell and I made several freezer meals last Friday night and this was one of them! We fixed it for dinner tonight with rice and it was actually pretty delicious - definitely worth checking out if you’re looking for some new recipes.

Productive afternoon!
After seeing Mirror Mirror and getting dinner at Olive Garden with my mom (plus my dad & Roswell) for Mother’s Day - came home and made banana bread for work tomorrow, “paleo” banana bread muffins for Roswell & I and a slow cooker full of veggie soup for lunch the rest of the week!

This weekend was a comedy of errors for Roswell and I so to finish it off with prepping for a good week helped focus me.

Camping season is right around the corner! What’s camping without S’mores?

Cream Cheese S’mores

Serves: 4Hands-on time: 4 minutesTotal time: 5 to 7 minutesCATEGORY:Under 45 Minutes, Vegetarian                                                                      

INGREDIENTS:
1/4 cup low-fat plain cream cheese
1 tbsp raw honey
2 tsp dark cocoa powder (70% cocoa or greater)
12 natural graham crackers (Try: Health Valley Organic Oat Bran Graham Crackers)
1 tbsp raw cacao nibs
INSTRUCTIONS:
Preheat broiler to high.
In a small bowl, combine cream cheese and honey; mix until smooth. Stir in cocoa powder and mix until almost completely blended, leaving a few white and brown streaks for presentation.
Spread about 1 1/2 tsp cream cheese mixture onto each graham cracker. Arrange crackers on a baking sheet and broil for 1 to 2 minutes, until warm and soft.
Remove crackers from oven and arrange on a serving platter. Sprinkle with cocoa nibs, dividing evenly, and serve warm. Enjoy open-faced or sandwich 2 crackers together for a more traditional treat.
 Nutrients per serving (4 crackers and 5 tsp filling): Calories: 130, Total Fat: 5.5 g, Sat. Fat: 2.5 g, Carbs: 18 g, Fiber: 2 g, Sugars: 6 g, Protein: 3.5 g, Sodium: 85 mg, Cholesterol: 8 mg


Nutritional Bonus:
While tea, red wine, cacao and cocoa powder may all do wonders when it comes to satisfying your soul (and taste buds), they may also play a hand in strengthening your heart. They’re all rich in catechins, a type of flavonoid that has been found to help reduce blood pressure while lowering LDL (bad) cholesterol and increasing HDL (good).

I love s’mores. :)

For dinner tonight…

Asian Sesame Chicken

Recipe from McCormick

2 lbs salmon fillets (I only used 1 lb)
1/3 cup honey
1/3 thinly sliced green onions
2 tbsp soy sauce
2 tsp sesame seeds
1 tsp minced garlic
1 tsp minced onion
3/4 tsp ground ginger
1/2 tsp crushed red pepper

Directions:
1. Mix honey, green onions, soy sauce and all of spices in a small bowl until well blended. Place salmon in baking dish and spoon honey mixture evenly over salmon.

2. Roast salmon in preheated 375° oven 20 minutes or until fish flakes easily with a fork, basting occasionally with honey mixture.

Served along side brown rice and peas - delicious!

PS - that’s a Roswell portion :) mine was half the size.
